Australia Honeymoon February/March 2025- help with itinerary

My fiance and I have decided on Australia for our honeymoon in Feb/March 2025.

We are flying into Sydney and will be there for 3-4 nights. We are doing the harbor bridge climb, seeing a show at the opera house, going to a wildlife reserve in the blue mountains.

Then we are doing a ten day cruise to Cairns, Port Douglas, Airlie Beach, and Tangalooma.

Afterwards is where we are stuck. We have five more days in Australia and want to see Uluru and/or either Melbourne or Brisbane.

What would you guys suggest for the rest of our itinerary?

I will note that our layovers are in Hong Kong, so the last leg of our trip is two to three days in Hong Kong.
