Bangkok for 3 nights in June

Hi, would love some advice planning out the last leg of our Honeymoon. We are going to Thailand in June, the first 5 nights will be spent at a resort in Koh Samui, while the last 3 will be spent in Bangkok. Koh Samui we have finished planning, as that part of the trip is really going to be unwinding in the resort and beaches. Bangkok we are a little overwhelmed with how much there is to do.

Some background, my fiance and I are both in our early 30s, and are budgeting around $2000CAD for Bangkok. We are not big into the party scene, so clubs and bars aren't a must for us (we do however are open to a rooftop bar, as people have mentioned that is a must experience in Bangkok). We much prefer immersing ourselves in the culture of areas we visit, and have a more relaxed itinerary, rather than jampacked back-to-back days.

3 things we decided we'd like to check out; Grand Palace, Muay Thai Tournament, traditional Thai Head Spa. Would be great to get advice on:

1) What area to stay, and recommended Hotels (budget up to $200/night). Read Sukhumvit is party central for tourist, so would most likely want to avoid staying there.

2) What markets are a must for food and shopping? (Weve read Chinatown is great, so perhaps staying in an area close by)

3) We are open to tours, but would prefer if they were private. We don't want to be a part of a large tour group for our honeymoon.
