Can’t decide on a location please help! Also airbnb or resorts?

Really our priorities are to be able to swim, have great food and a mix of relaxation and adventure. Trying to spend $2,000 per person for 10-14 days if we can. We have been to Ireland, it's where we got engaged and LOVED it. Food was good, so much adventure and just had a lot of fun

Greece

Croatia

Italy

Austria

Switzerland

We are trying to see if we can hit 2 of the places within 2 weeks depending on price. We also have decided instead of going right after our wedding in May we would prefer to go beginning of September, and fly out of Toronto since it is cheaper. Locations in no favorite order, at this point it's just what we can afford, I believe any of these places would hit the nail on the head. Also airbnb or resort/hotels?
