Europe 2 weeks, 2-3 countries and balance of rest and relaxation

Hi all- my fiancé and I are looking for embark Europe for about 2 weeks for our honeymoon in June 2026! (we could stretch it to 17-18 days depending), and have never been to Europe. We are hoping to spend about 12k no more than 15k (not including flights) and want beach, with some adventure (60/40 split) we love breweries, wineries, hikes, and seeing new historical monuments.

Any recommendations? What countries/ cities do you think would be a good combo?

Any general travel abroad tips?
