Europe mid September?

My fiancé and are looking into booking a honey money starting September 15 and lasting about 10 days.

Our budget, excluding airfare is about $1k a day. We are looking at Greece but open to anything. I think a good view and maybe a spa would be ideal but open to any recommendations as long as it's not constant movement.
