May honeymoon suggestions?

I am giving my son and his future wife a honeymoon for 7 days next May. My budget is $5k-$6k max for the major expenses (airfare from USA, hotel & rental car). Neither person enjoys hot weather(they both sweat!), but when I Google honeymoon locations, all the top recommendations seem to be beach/tropical. I also looked at Iceland, the Azores, and Norway, but prices are crazy high. They are not fancy people…both enjoy nature and being active, but they are not athletic or big risk takers. Any suggestions?
