Resorts with private plunge pool, beach access, and vegetarian options?

Basically title. Going on our trip in July. I’ve seen some cool resorts in Mexico (Esperanza Cabo, TRS Yucatan, Viceroy Riviera Maya) that have some really nice looking suites with private pools.

We want to mostly spend our time at the resort and on the beach. Unfortunately, not many of these options I’ve looked at seem to have good vegetarian options. Any suggestions?
