USA in November, Europe in Spring

Hi all! my fiancee and I will be getting married next October and have plans to do the following:

1. mini moon somewhere warm in the US in November

2. longer trip in the spring in Europe

any recommendations for nice resort style hotels in the US?

also what countries are best to visit in the months of April/May?
