$7000 budget for April honeymoon

Hi everyone, I am trying to figure out our honeymoon for 3/28-4/6. It's last minute because we both work 70-80 hrs/week and it's really hard to figure out times that work for us both (we've been married for two years!). We have 180,000 miles on Amex and would like to find a destination that works. She's not a huge fan of tropical/beach locations. I looked into everything; Spain, Japan, cruises, etc. But it's overwhelming to choose something. I was wondering if anyone has personal experience with something around the same budget. I'd appreciate it!
