7k March Honeymoon (No Tropics?)

Hello! We are getting married next March and we're really struggling trying to come up with honeymoon ideas. We have only 8 days of PTO available, so that's the maximum length it can be. We're not particularly interested in flying to Europe/Asia/Africa because we'd have so little time there and would waste 2 whole days just traveling. We have a budget of $7,000.

We are coming from Arizona, so any locations from there (Sedona, Grand Canyon, Tucson, Phoenix) are out because we've been to each a million times. Huge dense cities stress me out too much, so we'd like to avoid any place like LA or San Francisco. Ideally, the location has to be LGBT friendly, or at minimum LGBT safe. We are both visibly queer and do not feel safe traveling to Texas or Florida at this time. We do not drink, so all inclusive resorts or wine tours are not on our radar.

We got engaged in Monterey, California and that was an absolutely dream! We loved the small, walkable town full of cute shops, while also being in driving distance of beautiful nature vistas. We are not opposed to/like the cold/rain/snow, but we would like to avoid any place where we'll be completely trapped by a blizzard the entire trip.

A rainy afternoon in a cabin or bed and breakfast in the woods sounds much more appealing to us than a hammock by a warm beach. We could be convinced to try a tropical vacation spot, but it's not typical for us. This has made finding recommendations very hard! Any help is greatly appreciated!
