Advice for late October trip

Hello fellow travelers, my fiance and I are getting married soon and are looking to go somewhere for the last week of October, I know this is short notice but it wasn't planned, we were going to have our honeymoon around the holidays due to work but some things moved around and we have the last week of October off (for both of us). We like to explore new places and try new foods, beach is not a must but we do not want cold climates. Budget is around 5-6k USD or so. My fiance is leaning towards Paris but I don't know anything about the country and the flights seemed a little steep. We are leaving out of the Midwest in the US.
