All-inclusive resorts in Mexico/Central America?

Hi all! Pre-planning for our honeymoon has begun! We’re not going until well after our wedding since my fiancé is a teacher and we’re getting married during the school year.

We’re looking at going to Mexico or Central America, since he’s a Spanish teacher and would like to visit another Spanish speaking country.

We’re coming from the east cost, so preferably something on the eastern side of Mexico or somewhere in Central America. We don’t have a budget yet, since we’re so far or and just trying to get our bearings on potential places to stay.

Does anyone have recommendations for All Inclusive Resorts? There are so many resorts when researching, I thought I would try to get it narrowed down by those who may have actually tried the spots!
