Another Honeymoon Advice Thread! Best All Inclusive?

I'm getting married in December, and we want to do our honeymoon around the end of December/the beginning of January. Ideally we would be over News Years eve for some kind of celebration. The three trips that we have considered are a west coast San Fran/Napa Valley trip, and East Coast NYC/Lake Placid Trip or an all inclusive resort. I know all three of those are very different, but we are looking into all of them.

If anyone has done similar trips to the two domestic ones, I would love to hear some some dos and don'ts.

For the all inclusive thing – looking at that is all pretty overwhelming and online reviews can be misleading. I want good food, good drinks and good service. I'm open to most destinations, but would prefer to avoid Jamaica. I also like the idea of a place with fun excursions to activities – like riding ATVs or sailing or things like that, but it isn't a flat requirement. What are people's favorite places? The most fun or relaxing? Sandals? Excellence? Other?

When thinking about these all inclusive places, I always think about the beach – but if there are other cold weather all inclusive resorts that I just don't know exist, let me know that too.
