Belize (or something else) end of June 2022?

Hey! My fiancé and I are apparently last minute kind of people. We’re open to LOTS of things but I think we’ve decided to narrow it down to something Belize-ish. Beaches, a few adventures, good food, nature. Neither of us drink so an all inclusive is probably not our best bet. Budget of $5,000 including flights from Portland or Seattle. Hoping to stay 4 or 5 nights. Specific resort recommendations would be much appreciated!

If you have any “out there” recommendations for a mix of adventure and relaxation in the US or elsewhere, I’d also love to hear those. I definitely want to go zip lining if possible!
