Best beach spots in January

My fiancée and I are getting married in January 2021, and we’ve been in love with the idea of a beach get away. We live in Texas so we initially jumped at ideas for St. Lucia as the travel isn’t too bad. I did some digging and found Bali to be really interesting as well. We thought about Bora Bora, but I read mosquitos are terrible Dec-Mar. Does anyone have recommendations on their travels to any beach destinations? What we’re looking for is primarily

1. A private villa (ideally off the beach or with a pool)
2. Preferably a private beach
3. A good all around resort (nice gym/spa/etc)

We have a rough budget of $6-8k not including flights for an 8 night stay. Ideally I’d love to spend less, but if it’s the perfect spot I’m in.
