BUDGET $3500: need recommendations

Recently engaged 26&24 years old. looking for travel recommendations!! budget is probably $3500 for 7-10 days.

We are outdoorsy and camp a lot so looking for something a little more romantic. Open to leaving the country, and looking for more moderate temperatures, NO SNOW.
