Conflicted between sandals RC vs Cocobay vs other all-inclusive?

My fiancé and I are planning a honeymoon for May 2022. I didn't realize we seem to be late to the game. He booked Sandals Royal Caribbean just in case as a few other places I was really interested in are booked already. They no longer have butler suites, so it is the Kensington Honeymoon club level. I am super excited but at the same time I am a bit nervous to spend so much when there have been some recent negative reviews regarding the construction noise, room quality, and ability to get reservations without a butler.

My dream honeymoon would be at an all-inclusive with a romantic room with some fun features (like a plunge pool, outdoor shower, or just overall a nice room with a nice view that is fun to come back to), quiet at night in the room, with multiple restaurant options and ideally a smoothie/coffee bar option (tasty food is a huge priority), and access to the beach to swim. I'm not sure if this exists. I found some that seemed to fit in Mexico, but my fiancé has been excited about the Caribbean. I looked at Cocobay Antigua, which has the romantic room with plunge pool but only one restaurant. Has anyone had any experience with either of these resorts or could recommend one? thank you! 🙂 I have been reading reviews to the point where I think my eyes are about to fall out of my head
