ISO Fall honeymoon destination

Hi all!

My fiancé & I need suggestions for a Fall/Winter honeymoon spot. We are not looking for anything tropical, so no beaches or tropical islands please. We are mostly looking for mountainous areas with cabins/resorts we could stay at. We both love nature but are not experienced hikers or necessarily want to be secluded. I would actually prefer we are closer to a small town in case of an emergency. We love wineries, breweries, & trying new foods. Any historical towns with museums & such would be nice as well. I was looking at places like Oregon, Alaska & Colorado but not sure what to do/where to go in those states. Please help!
