Looking for an all-inclusive suggestion in the Carribean/Mexico

My wife and I would like to stay at an all-inclusive resort for our honeymoon any-time between mid January to mid March (we can go on whichever dates that gives us the cheapest rate)

Here's a couple of notes:

1. Budget: 7000 USD
2. Number of nights: 7
3. A suite that will enable us to not wait for a table at a restaurant and also wait for sun beds/pool lounge chairs/etc.
4. Good food is a must as we are both foodies
5. Decent sized beach with clean and steady water
6. Excursions such as scuba diving, etc would be amazing

We have looked at Excellence, Sandals and Couples resorts but it's hard to figure out which one of the many resorts will best suit us.
