Looking for European or South American recs based off likes

So fiancé and I planning our honeymoon for summer 2022 and thinking of either Europe or S America.

We’d like a mix of touristy/sight seeing/adventure along with relaxation like a beach or mountains or resort. So spending the entire time on a resort is not what we’re looking for. Total length would be 7-10 days including travel.

In Europe I’ve been to Spain, France, Germany, Netherlands, Italy, Sicily, Hungary, and England so looking for a place I haven’t been.
