Mexico in early November?

Finacée and I are looking for a blend of activities, sun, relaxation and some solid passion fruit mojitos! She's Dominican, so we didn't want to necessarily go to the islands, but LOVE Mexican food, so obviously thought somewhere in Mexico could be a good fit.

Any suggestions on all inclusive resorts in early November? Also if Mexico in November is not a good idea due to weather or something, would love to know that too!
