Recommendations for 3 week European honeymoon

Hi everyone! I’m struggling to get going on planning my honeymoon. As of right now, we have booked one week at the Ikos Andalusia all-inclusive resort in southern Spain the second week of Sept. We want to do around two more weeks of more active adventuring at the beginning of the trip with the resort being our chill time.

What suggestions do you have? I’m literally wide open to the possibilities. We’re flying from NYC, but haven’t booked flights yet. I thought maybe a stopover in Iceland, or flying into Paris/Zurich and doing a road trip through Charmonix. I’d also be fine with a more focused Spain/Portugal or Greece adventure. At this point my head is spinning from too many options!
