Suggestions on this trip?

We want to extend this trip to a full three weeks. 24th to the 16th. Wondering if anyone has any experience going to these places and where we should spend more time in or which ones to spend less time in. We like outdoors, we love culture and prefer a more authentic experience of the country. We love adventures and love good food, but we also like cooking too.
