US all inclusive that’s not a beach?

My fiancé and I are looking for an all inclusive resort that is in the US that’s not a beach. We’re looking for something more outdoorsy and will be looking to go late October or November. Does anyone have any recommendations or good experiences? Not looking to spend an obnoxious amount but willing to splurge when needed.
